Pork Chop Sammich

 PORK! is what's for dinna'!!!!

Tonight I wanted to do a version of a pork chop sammich recipe I saw on foodnetwork by Giada.  So I stopped by Wholefoods (my new favorite grocery store!) to pick up some awesome looking boneless pork chops that were also on sale! (yay!!!)

Smoked Paprika, cracked pepper, salt and herb de provence pork chops on toasted Italian bread.
Because these were frou frou grass-fed, organic pork, I was able to cook the chops to medium doneness --a bit of pink, still juicy and safe to eat if you have good pork.

Basil, lemon zest, lemon juice, cracked pepper and cayenne mayo spread

Garlic broccoli raab and sweet potato mash

I love it when dinner's tasty and quick!
